Abstract


With the increase in world production of cheese there was a problem of deficiency of rennet. The selection of efficient producers of milk- coagulation enzymes among the higher fungi cultures is an urgent task. Studied caseinolytic activity 5 species of Basidiomycetes. It has been shown that the level of activity of milk-coagulation enzymes of Basidiomycetes is comparable to the commercial activity of the drug, used to make cheese.
